Spicy Sinamak or the Ilonggo spiced vinegar with 2x the spice of the Mild Sinamak, aged with spices giving it a very flavorful taste. It is normally used as a dipping sauce, but it is also great for cooking. In Ilonggo cuisine sinamak is a tradition, especially with Inasal or anything grilled.
